Since it's out of sight you could use any of the current felt type underlay. The original stuff had some nasty ingredients apparently, although I've never tasted it.

No. The insulation sat on the painted floor surface with the carpet on top. The whole lot was held in place by the press-studs in the carpet.3. Was the insulation fixed to the metal work with a type of contact adhesive?

No, except as below.As mentioned earlier by
Stibbsy, on the inner firewall (behind the pedals and heater) that piece of carpet is glued to the underlay which is then glued to the firewall. There is no underlay on the inner guards - the carpet is simply glued to the painted metal.
