Have rubber unis on a 1098, have pots on a 998 that has discs at the other end of it.

Is it as simple as unbolt from one, put on the other with new gaskets? (replacing the rubber unis for the discs and pots)

Not that simple...

The output shafts from the diff & driveshafts are different so at a minimum all the parts in the photo: https://minikingdomonline.com.au/produc ... pot-joint/

If you have a whole assembled pot joint diff you can swap the whole thing - provided the diff ratio is the same.

You can just swap the pot joint parts to your existing diff, of course diffs wear out and need shimming too, so you might also need to replace:
Diff pin
Planetary gears
Thrust washers
Oil seals
Cover bushes
Diff cage
Cv joints
Etc

So, am up to the point where old rubber unis have been long gone, the pots are ready to go, have planetary gears for pots along with new thrust washers and oil seals.
How do I remove the uni out put shafts from the diff, and can I take the diff off the engine while the engine is still in situ?

It's technically possible to do with the engine in, it'd probably take twice as long though.

You need to remove the diff, undo the 6 bolts to take off the crownwheel and then remove the roll pin to get the diff pin out. Then the planetary gears come out and you can swap the output shafts.

While doing all this you need to check there is no wear to the diff cage and the big diff bearings are still smooth. I assume you have a new diff pin to go in?

no, you can't do it with the engine in. The diff housing mounts on 4" long studs, once you undo the nuts you can't slide the housing back
