I have seen a lot of these conversions on YouTube in the U.K. They look popular and awesome. Are there any similar 2L conversions that anyone has seen here in Oz? Is the Vauxhall engine used available in any Oz released vehicles?

The Vauxhall 'red top' is the GM Family II engine. I think they were fitted in some Holden Astras and possibly Vectras here, although possibly not the 2L version.

Did any "Red Top" engines come to Aus?

Allspeed do frames for Vauxhall engines.. The engines are much cheaper and easier to find in the UK. They also do a few Rover K-Series swaps for the same reasons.

I guess for a time/effort/money/performance balance they don't work out as well for Australia.

Yep, in the Astra, Calibra, Zafira and the Daewoo Nubira.
There are better engine choices out there, the A series being one of them.
