I've had a bit of a search, but thought I would ask the question straight out, but is it possible to replace the drop gears in the car (i.e. no engine out).

I'm thinking of adding a bit more scream to Barney's already grump note with a set of straight cut drops. Yes, I know I know.

Any thoughts, suggestions, ideas would be appreciated.

Yes it would be possible but a bit like extracting a tooth through your arse! Just take it out and do it on the bench much less fuss and you'll need to set clearances which would be a right pain in the car.
