Twin SU's with factory linkages are not difficult to tune and do stay in tune. Home made or after market linkages are usually the source of tuning problems on twin setups. Getting the needles right is the tricky part if your engine is non standard.
I switched from a 45 Weber to 1.5" SU's on my GT back in the 70's and noticed a slight loss of power over 5,000rpm but under 5,000 you wouldn't know the difference. Went from 25mpg with Weber to 40mpg with SU's on a trip though. In hindsight the Weber never ran right even though I had it set up on a dyno.
