yes guys, the problem was that the sender probe was hitting the block the other side of the water passage.
Solution:
Adapter bolt that the sender probe fits into, then into the block. Seems to have fixed the leakage problem. I also used thread tape on the thread of both parts (original part plus the extender/adapter)

The end of the temp guage was slightly squished, but doesnt appear to be broken in any way. Its working fine, wont know how it performs until its had a decent run I guess, but looks good so far and is working.
