With the motor off should you be able to operate the wipers by hand by pushing and pulling the cable thingy? I'm looking for a reason why the wiper armature cooked itself and although the grease in it was thick I don't think it was solid enough to sieze the works. The wipers however will not move by hand.

If you disconnect the motor/box assembly from the cable, then yes, you can move it to and for by hand.
You won't move it with it all bolted up. Too much gear reduction (including a worm drive) in the system.

The motor is off the cable (and in pieces on my workbench) - I'm trying to push the cable back and forth and make the wipers move

Take the wheelboxes apart.
