Should I run one with My S Disc Brakes if so what one is the best to get. I was hoping that I could mount it under the guard to free up the engine bay as it gets very cluttered with a booste installed.

You dont have to run a servo. Its more what you prefer than anything. Im not sure of the legalities however. It also depends on what kind of pads you are running and how comfortable you are pushing the brake pedal etc. I personally dont run one on my 's' discs- i find they are a bit hard if you are driving in traffic for long periods of time but they do have good feel.
Fitting it under the guard sounds like an ok idea, but the main proplem i see is how will you bleed it properly? would probably be rather fiddly.

my 850 has a booster mounted to the underside of the parcel shelf in the boot, with a vacuum reservoir tank mounted under the rear seat, and operates with the standard single leading shoe drums  all fitted by the previous owner. seems to work alright though.

<edit> and i don't run a booster on the mini minor with S discs. i used it quite happily for the supersprint without needing he-man thigh muscles to brake hard

I'm pretty curious about this setup - so there is a vacuum line from the manifold to a reservoir tank, then the tank to the booster. What does the tank do? are there any non-return valves or anything? are the main pipes rubber or metal? I wonder if there is a drop in vacuum caused by rubber lines sucking in under pressure or something... it'd be interesting to attach a vacuum guage at the manifold and at the booster to see if there is a difference, or if that amount of vacuum line (which should constitute part of the induction length, shouldn't it??). Ever tried blocking it off at the manifold and seeing if it runs differently?

if you want to mount a booster in a guard you will need a VH44 booster. These are available new for $420. I got mine second hand for $30 but needed a full reco which set me back $250. They were found on mini's, escorts, jags ect.

Mines mounted under the dash on the passenger side.

And if you DO mount it under the guard remember it breathes air, every time you hit the brakes. The little filter it has will fill with mud and water, if you don't take steps to prevent this.

Due to the way boosters work, you will have LESS pedal.
Less force needed though!

exactly the same concept as a pressure accumulator in a hydraulic or compressed air system, except in reverse! If the engine stalls there is enough vacuum (lack of pressure) to apply the brakes 3 or 4 times before it becomes unboosted (yet to test this). Normal boosters if the engine stalls you get one application before the vacuum disappears. I think it also helps the 850 maintain the vacuum over the long distance to the booster, because it does not pump nearly as much air through the engine as a 1275 :D
