When I went through exactly the same process with my car, I left the rego in Steve's name until I was ready to transfer it over to NSW rego.
Everything that has been explained above is correct, you will need to blueslip it. I also got an engineer's report, that whilst may not be a requirement, at one stage I did produce it whilst standing at the RTA counter. They treated mine as 2nd hand vehicle from interstate, however as it was an import they asked for the engineer's certificate and the DOTARS documentation as well. It basically made the whole thing smoother being able to produce these documents, and the RTA officer didn't bother to ask their supervisor or refer me for VIIU check.
I followed these instructions (see both "Second-hand vehicles currently or previously registered interstate" AND "Imported Vehicles").

Make sure that Steve gives you all of the documentation surrounding your car. He did that with me (a bundle of papers), and the ones that the RTA where most interested in was the proof of purchase (along with the weighbridge ticket, blue and green slips).
My advice is go down to the RTA with the car and as much documentation as you can compile in a neat little folder, park it, take the SA plates off, walk in there and be as polite and as business like as you can possibly be.
