What you have a phot of there is the innocenti cooper 1300, built 1972-1975. After reading about these, they crap all over the UK and Aussie ones in terms of specification, style and comfort. Great to see someone wanting to do something Mini different!
My advice is to get on to an Italian Mini Car Club before you go and do some research that way....
Strongly recommend you go for a turbo version as although the 993 loves to rev they are down on horses or add a turbo in Aust from a Charade (I know it won't be original then...)....fairly sure you can both normally aspirated and forced incudction types in Italy.
