From what I have seen at Mini Club meetings in the period sales brochures, and other cars the seats in the pics look like the tough as old boots 68> Deluxe, Matic, K, Cooper seat pattern and material (although I think Cooper trim was mostly just black). The 65-67 Deluxe certainly had different patterning again.
Morris 850 trim seems to have typically been two toned vinyl trim (also in the door cavities), kinda of a rough, dimpled/orstrich skin patterning on the main wearing parts of the leading edges of the seat bases and tops of the seat backs and smooth vinyl of a darker complimentry colour on the fluted main seat and backrests. Colours like two toned bathtub Greens, sky Blues, Red/pinks, etc sometimes in a strong contrast to the paint.
Light/White body paint = pink/red or sky blue trim. Dark/Black body paint = pale green, blue interiors, etc.
Cooper = all black regarless of body colour.

Pity there is only the "Original Cooper" book and not one to cover all the Minis.
