Considering I have never started an engine whilst it was out of a car, can someone let me know what the basics are? Besides a fuel supply!

Same as in a car really.

You need to have the electrics. Basically just a battery with a starter solenoid (the one from an early 850 -the floor start type - is good because it eliminates the need for a a keyed ignition). You will also need an exhaust.

Sorry to say again, but Im not a mechanic. If I have done it, I can usually do it again. I've never floor started an engine.
Negative to the block/head?
Positive to the coil?
Maybe screwdriver across starter motor? (where?)
Sorry, dont want to sound stupid, its just what I do! :D

To crank it on the floor just get your battery, some jumper leads and hook the earth onto the motor, and just touch the positive to where the power cable goes onto the back of the starter. No need for a solenoid

...and to run it, just wire from the + jumper lead to the coil + terminal. To stop it, pull the earth jumper off the motor.

I hang a 5L jerrycan on the wall and gravity feed the fuel to the carby..

If the alternator is on the motor, you won't hurt it by spinning it, AS LONG AS no wires are connected to it at all.
