Does the nut on the bottom of the SU carby affect only idle mixture, or does it affect mixture right across the rev range? |

Yep, the mixture nut changes the mixture throughout the rev range. The idle screw changes the amount of mixture allowed through at idle - changing the idle screw won't affect the rest of the range. |
