Very hard to say, these things are something that don't translate in to words very well. Could be steering rack or 101 other things. Jack the car up and have a look / skake / move about. You may need to jack it under the lower control arm to have the suspension sit at a more natural level to find the problem.

Question 1. Maybe check your engine steadies and exhaust mounts.
OK i think i might put her up on some ramps on the weekend and have a roll around underneath it and see if anything is close to hiting that could knock with the motor twisting. Funny thing is though i only ever notice it going from a standing or very slow pace and taking off (not crazy taking off, just normal takeoff) I dont notice it changing through the gears or anything (i will pay more attention next time im driving it)

The one at the rear could be a loose brake backing plate? Have you got the shoes in the right way around and the right springs in the right place?

Question 2. Might be due to bulk loads of Rust coming of the drums if the car has been sitting around for along time. Whip of the drums and have a good clean.
I cant remember if i replaced the brake shoes or not, I know I changed the cylinders. So i will have to check whether everything is still tight and together underneath.
Rubbish in the drum could well be it.. it was sitting for 20-30 years before i got it so in my driving has probably polished the inside of the drum and in the process knocked a heap of rubbish off the side.
Its just a bit embarrassing- coming to the traffic lights and my brakes squealing as though do
Thanks for your opinions, I will try to get round to it on the weekend and let you's know what i find
