Is it as simple as different rotors and Callipers?!?!??!

Drive flange is different as well.

I used 8.4" rotors turned down to 7.5" for my 4-pot callipers, not sure if you can do the same for Cooper S callipers though.

Depends on how you do it. I bought a kit from Mini Sport that had 7.9 vented rotors and four spot calipers and it was a straight replacement for the same bits on the 8.4 brakes. They also had a 7.5 version of the kit. Some wheels (usually the older ones) won't fit with the 7.9 rotors and even the ones that do require careful attention to where the balance weights go.
