The Mini Experience, Issue 4, 20+ pages covering the history of every Mini that raced at Bathurst. Magazine has sold out, but digital version is available (in pdf form) and full digital version will be available on-line some time next year.
As that was written 10 years ago, some more recent information has come up, which has been covered from time to time in The Mini Experience and The BMC Experience. For example, one of the Minis that raced at Bathurst in 1974 turned out to be a Clubman GT, not a Cooper S as had always been believed. That was explained in Issue 5 of The BMC Experience.
We also had a major feature on Peter Manton and all his Minis in Issues 7 and 8 of The Mini Experience, and in Issue 1 of The BMC Experience had a story on one of Manton's Minis that has been recently restored.
An interview with Brian Foley was in Issue 2 of TME and numerous other Mini racers on a regular basis.
We have also followed, in every issue of The BMC Experience (except Issue 6) the restoration of the Cooper S driven by Brian Foley and Paddy Hopkirk at Bathurst in 1967. This should be completed early in 2015.
If it is a DVD you are after, the series The Great Race, by Chevron Marketing has some good Mini footage, most importantly in the DVD on the 1960 to 1966 races. We don't sell it anymore, but see here:

There is no book on the market, yet, that details the Australian history of the Mini, in racing or on the road. (Except Spotlight On Mini Minor Down Under, but I would neither call that detailed or particularly accurate).
