the moke is being collected tomorrow, and I thought I'd better do the right thing and put some parts with it..... I've got the master cylinders that came off my van when I put the S gear in it, they work OK, but I have no idea which is which - the moke is missing the brake one

so, how do you tell which is which without pulling them apart? they are both tin type

Look close and you will see the flanges are in different positions. The tank of clutch one is offset towards Left, brake one towards Right.
You can't mix them up, they won't both fit in if wrong.
