I've got a couple of timing plates, the top one has the extra bracket on the corner. Is this used for anything important or can I just use the basic one?

They are Morris 1100/1300 with the forward stabiliser onto their particular subframe mount. I'm not sure why the second one is slightly different again however (maybe auto??) You can use them but its not worth the extra loss of room out the front to get your hand in.

I trimmed mine with an angle grinder. Was an 1100S block originally but turned into a stroker.

Top one is 1100 or 1100S or maybe Minor/Sprite/Midget, it had 2 of those mount pads originally. One has been cut off so it fits in a Mini.
The bottom one is Mini.

ensure which ever one you use that you countersink the holes that the screws hold it to the block (if not there from factory).

That's the 2 screw holes at top of pics, holds the plate to the main bearing cap.
