Changing back to a generator on my moke and am unsure if the polarity of the generator has been changed to negative earth.

How to ensure it is negative earth if someone who owned the generator before me didn't do it?

if its a std issue Lucas mini generator
then all you need to do is hook up the battery (Neg earth or pos earth) depending on what you want
make sure your coil is wired to suit also
then turn the ign key on & it will automatically Pole itself
start the car & test output charge with multi-meter to confirm all is well

It has no heater, I was originally running a generator and it kicked it while on holidays so had get an alternator wired up, and that has recently kicked it in, so going back to generator.

field terminal is "flashed" to earth after reversing the battery terminals using a wire from the +ve terminal is the correct method.

I wouldn't take anything for granted. you run the risk of ruining the Voltage regulator or cutout points. It takes two seconds to just ark between the F wire and the B+ on regulator box and job is done.
