As the title suggests, what is the correct procedure for adjusting the spring loaded pin bolted to the bonnet? My bonnet release is becoming more difficult by the day to operate and I assume it's that adjustment which is incorrect?
I've been bitten before, a few years ago the bonnet flew up as I was overtaking a road train somewhere east of Kalgoorlie. I nearly s*^t myself and I don't want to go through that again...

That's why I have bonnet straps. They aren't just cool, they may save your life one day.

It's pretty simple, there is a nut behind the spring loaded striker pin. Just undo that and put a big flat head screwdriver on the striker pin itself which then you can turn to either extend it longer or make it shorter (by your description you need to make it longer?). Redo the nut up tight to lock the pin in place

If it's "getting more difficult by the day" are you sure there isn't a bit of lube required.
If cable release, it may need oiling.
The Spring catch may need some grease or graphite lube so that it will slide easier to unlock the bonnet.

phil 850 is right. You adjust it to make bonnet fit/shut properly then 'theoreticly' it shouldn't need adjustment, only a bit of lube now and then.
