You also need different brake hoses for the front and a different wheel cyliner for the rear drums, i think that is all

It's probably worth getting a couple of new brake hoses while you are replacing everything.
That's what I would do anyway.

Is it worth spending the money ? Are twin leading shoes as good as 7.5" discs? I really want to keep the 10" wheels and no flares so are there better options with this configuration?

Depending on your wheels you can fit discs without flairs, I have 10x5 LS contessa.
Drums will need weekly adjusting to keep them competitive with discs but then you'll still have to deal with drums tendency to fade with heat, yes discs fade but not as bad as drums.

Also any small imbalance from left to right in adjustment or wear does have
a significant effect on the brakes pulling to one side.
I know from dramatic experience with an EH, also a 6 cylinder ZB Fairlane and a Daihatsu Handyvan.
Twin leading shoes do have a self servo effect but a least discs are immune
from pulling to one side ...and think of the maintenance....give me discs anyday.

Nothing really wrong with drum brakes except you are under there regularly to adjust the buggers.
2 L/S brakes stop as well as discs, ONCE. It is all downhill from there as the brakes heat up.
Discs self adjust, and are way more fade resistant.

If you don't want flares find some Cooper S wheels, or LS offset Contessas.
A Mk1 S was legal without flares, except in South Oz.
