I think we will need a bit of a better desciption..

Does the noise increase/match with engine revs? or is it a constant sound maintaining pitch and volume?

erm yeh increases but only when the car is moving, so I suppose as it goes faster not the actual revs sorry. i can rev it stationary and no sound ?i dont think its a wheel bearing as it sound mor central to the car - sort of under your feet area

Does the steering start to get jerky and the steering wheel move on its own once you get past 30mph?

If it's got rubber uni's check those for movement. Mine were so worn when I got the car, they were hitting the back of the gearbox! Thats my limited experience 2 cents worth. :D

maybe check around your drive shaft I had a peice of the radiator shroud fall of and onto the drive shaft Causing a Scarey rattle and grind at speed. check every where and anywhere that has anything to do with the drive shaft Or moving wheel Parts.
