can you use carbon fibre panels instead of fiberglass in race cars (CAMS approved)?
This depends on the rules for the category. The only category in Australia where this is legal is Sports Sedans (Group 3D). The rules for this class make no distinction between materials. Sports Sedans rules have the basic assumption that the component is free, unless otherwise stated in the rules. Most other categories are the opposite - only components stated in the rules are free, everything else must remain unmodified or you have to use the control component (e.g. tyres, camshaft, gearbox).

If you want to build a car for racing or speed events, read the rules first before you spend the money.
If you want to build a track day car, do what you like, just make it safe.
