Was wondering if I had a clubman 2 gauge/pod and a clubman 3 gauge/pod, would it be possible to remove the fuel/temp gauge from the 2 gauge and replace it with the tacho from the 3 gauge so that the 2 gauge had a speedo/tacho combination instead of the speedo/fuel combination?

Does that sound right?

Short answer = no.
The `wiring' to the 2 instruments you have is via a printed circuit board (PCB) at the back. Cars with a 3 clock set including tacho have a different (wider) one that does all 3.

Yep I know about the PCB, I was just wondering if I could put a hole here, a cut there in the right places missing the essentials of the PCB
