are you certain that it is "unadjusting" and not simply wear? it is extremely unlikely that it is able to unwind itself. To check if it is "unadjusting" by unwinding mark the adjusters and the backing plate once it is all adjusted up nicely. If you then go for a drive and the mark on your adjuster has moved, then you can say it is unwinding.
the linings do wear and require adjustment periodically (and i have heard of many people adjusting as frequently as you), which is why they put the adjusters in there in the first place. If you run out of adjustment really early after putting new linings in, then you may have oversize drums for which you also need oversize linings.
Adjustment of drum brakes is just one of the big differences between the joys of owning a mini and a modern car. Like brickworx said, if you don't like this particular joy the best solution is to change to discs.
