I'm running an 1100 with a 731 cam and 1-1/2" SU with KMX oil and 'hard driver' filter. Image

When cold it idles around 70PSI - give it a rev and it goes to around 85PSI. It takes probably 20+mins at idle to get warm.
When warm it idles around 40PSI with regular driving around 60PSI.
While doing a test run through the hills today I noticed at around 100kph I was hitting over 80PSI and when I came to idle after this it was as low as 20PSI.

What is the normal PSI? Do these sound OK?

Sounds spot on to me, thats how mine behaves.

If you ever do have suddenly strange readings it's worth checking the oil pressure relief valve. Mine was getting stuck sometimes. If it stuck closed it would send the gauge to 100psi and stuck open = low pressure.

Not disastrous, but it sounds to me your oil pump is probably looking forward to retirement, that's assuming your bottom end (bearings) are all OK.
