This one looks like a gal body, I know they do rust and some are pretty bad but still plenty of good panels on it

Thank goodness for that. Letting that first one go to waste would be a crime against Mokanity. Rusted floors and battery box - normal for most unrestored Mokes. Easy to get panels made (or proper panels from UK). The gal bodies fare much better from rust and being in country Qld it shouldn't be too bad - this from someone who knows what it is like to rebuild (I would never say restore) a true Shitbox Mini.
