Technically you could weld stainless patch panels into the mild steel body, but it wouldn't be a good idea. You'll get weird corrosion problems from dissimilar metals. Also stainless is not really that good for car bodies (even Deloreans only have a skin of it over plastic panels). There are many different stainless alloys, but typically they tend to fatigue and work harden more readily than mild steel, so will crack easily.
Zinc coated mild steel, like the factory used toward the end would be much better.

Sorry to disagree, stainless is terrific stuff providing you use the right grade.
There are no issues welding stainless to carbon steel.
Have a look at all the stainless steel trains running around.
