I know you said the timing is spot on, but it sounds like the timing is out

Running on is often caused by too-high compression for the grade of fuel you're using, or when the car is running too hot (either too lean air/fuel mix or timing too far advanced).
How's the temperature? When I first installed my 123 electronic dizzy I static timed it wrong and gave it about 10º too much advance, and it ran like a pig and very nearly overheated driving 500m down the road.
When you say it won't idle steadily, can you get the revs down or does it want to race? If the latter, you've got a vacuum leak somewhere (which will lean the mix out and give it a tendency to run on too).
5c to think about

Ive set the static timing to the 1/4 mark on the flywheel before running and have strobed it since then and set the timing at around3-5 degBTDC @600rpm(around about, bit hard to get it spot on when it idles all over the place).I put the timing light away and did it by ear, turned the dizzy till the revs came up and it idled better but higher then started to run hot so i put the dizzy back to where it was
Im running normal ulp with (valve saver)and the block has been decked and head shaved but i dont think that would boost the comp too much(perhaps some high octane stuff nxt time)She idles all over the place as in 600rpm to 1000rpm each time you push the go pedal but eventually settles to a very rough 750ish rpm, im thinking carby as im pretty sure everything else is good and she did have a very erratic idol when i first got her,the carb does have a bit of play in the butterfly.
Yes i am a mechanic but due to incidents beyond my control i have trouble with my long term memory, new car stuff no worries, old car stuff has all been fragmented, hence why im on here soundin like a noob
