Thanks for that. Can I please ask you to measure from the back edge of bolstered bit at the front base of the chair to your back rest. It just looks like u have heaps of bum space with that seat.

Ok. Got some measurements.

From the bulging lower section of the seat back Seat back to front most piping of the base is 380mm.....
From right under the seat back at its most visible section to the front most piping of the base is 400mm
Seat base height at rear of base is 220mm
The carpet underlay is 10mm thick
Total height from the floor to the top of the backrest is 650mm

The backrest is tooooo thick...... And hats their fault. So maybe just maybe they can change that. I'll chop some underlay out and maybe that will work? Otherwise, I'll pay to get the foam base thickness reduced.

I know it can be so frustrating when you do all the investigation as you did, but there are so many variables working with old cars.
I've had so many "redo's" in my resto

Here is my Mk 1 seats Brad yours are way to fat on the backs and the bases

Brad they are fatter then my Rover Cooper seats

When you say fatter then your Rover seats, do you mean the basses are fatter or the backs are fatter? Or both?

Hard to see in that above pic of the backrest, but the 0 mark is lined up with the bulged out section of the backrest, it extends further then just the piping.

Seats back at the upholsterers. They said it originally had 1 inch thick foam in the base, but I had supplied them with 2 inch thick base foam which minispares supplied... So that's my stuff up. After looking at the above photos they agree the back is to thick. It's also got 2 inch thick foam in the back as well. Anyways, we will work together to get it sorted out.

Should I also keep the front bolstered section????

Sort of. They let you put the seat further back, but they do raise up the front of the seat in doing so. They are also a bit dodgy. Instead of having the front 'leg' of the seat pinched between two sheet metal supports, it is now bolted to the side of the extender bracket, which is itself held at the front. Its not an elegant engineering solution, I doubt its as rigid as the original, and I suspect wouldn't be strictly legal.
